- 1 teaspoonful of light miso
- 1 tablespoonful each containing the spring onion and fresh cilantro
- 1 avocado, pitted & peeled then cut into about 12 slices
- ½ cup of red onion (chopped)
- 12 oz. of mixed baby lettuce
- 1 tablespoonful of lemon juice
- 1 thinly chopped spring onion,
- 1 tablespoonful of chopped fresh cilantro
For dressing, have the soy sauce, tofu, soy milk, mustard and miso combined inside a food processor then blend it to form a creamy-like texture. Place it inside a bowl then add cilantro plus the spring onion to enhance the texture. Keep the bowl inside a refrigerator for one or more hours.
Take another bowl then toss the avocado slices inside the lemon juice. This is done to prevent them from changing their color to brown. Take a larger bowl now, then have cilantro, red onion, lettuce and spring onion all combined together followed by proper tossing.
Add about two thirds of the salad dressing that was previously made and lightly mix it to have a layer formed on top of the vegetables. Put the salad on a serving plate then have avocado slices arranged on its top. Top every slice with the dressing’s remnant then serve it in the soonest time possible.
- 250g pumpkin (peeled and sliced)
- 400g of tomato pasta sauce
- 1 minced garlic clove
- 1 tablespoonful of olive oil
- 150g of spinach leaves
- ½ can cottage cheese
- 1 teaspoonful of Tuscan seasoning
- 1½ eggs
- ½ cup of Parmesan cheese (grated)
- 3 lasagna sheets
Simmer the tomato pasta sauce and pumpkin slices together over low heat for approximately 12 minutes. Heat the frying pan and then heat the oil to sauté the garlic for one minute. Put the spinach leaves then cook until the leaves get wilted. Extract it from the heat and allow for cooling.
Take a 24cm square-like baking dish then put about ½ pumpkin mixture inside it. Have it covered with a cottage cheese and lasagna sheet layer. Cover it once again using the lasagna sheet and then put the pumpkin mixture that is left on its top. Finally, put the cheese plus a spinach mixture. Add Parmesan cheese in generous amounts onto it and then bake it in a pre-heated oven that is above 180 degrees. You can serve it with some favorite salad or a wheat bread that is crushed.
